I was speaking to a women. Actually I was messaging through Pisces Pies Facebook with a women who had recently had a pie of mine. It was great that she decided to message verses post some bad remark or something like that – so I was grateful for the information she provided. Anyway, she had a cherry pie and said that it was great all the way up until she ate some of the bottom of the crust. It was soggy, uncooked, dough! Sucks as I try really hard to get the pies perfect. I have been using commercial ovens and they are convection which is new to me, but I have adjusted the temperature and time of cooking so I will do better next time! In the meantime if you ever get one of my pies that is like this (fruit pies only), just drop it in the oven at 350 degrees for about 12 – 15 minutes. Niles Pie Company talks about re-heating already baked pies.
I really do like this post from King Arthur Flour provides best ways of cooking and pans that get the best cooked crust!!
